Dansk-nordisk menu

Forretter:
Lune syltede sild med rugbrødschips og rygeostcreme
Lune kammuslinger med grillet agurk, agurkepesto og syre

Hovedretter:
Krydderstegt svinebryst med grillet hjertesalat, syltede løg, perlebyg og brøndkarsecreme Kornstegt kulmule med havtorn ’bearnaise’ ristet kål og syltede blommer

Mellemretter:
Skyr med lakrids, puddersukker og frysetørrede bær
Osteanretning med 3 slags ost, grillede løg, rodfrugter og svampestøv

Desserter:
Øllebrød med geranium-is, syltede æbler og sprøde flager
Brombærsoufflé med rosenfløde

Praktisk info:
Kokkeskolen er inklusive velkomstdrink, alle råvarer, husets vine og husets øl til madlavningen samt udvalgte vine til menuen. Drikkevarerne serveres ikke ad libitum, men i rimelige mængder. Yderligere drikkevarer kan tilkøbes. Endvidere er der indeholdt rengøring og opvask. Alle deltagere får udleveret et sæt opskrifter, som de må tage med.

Danish-Nordic menu

Starters:
Pickled herring with rye bread chips and smoked cheese cream
Scallops with grilled cucumber, cucumber pesto and acid

Main courses:
Pork roasted in various spices with grilled romaine lettuce, pickled onions, pearl barley and watercress cream corn fried hake with buckthorn ‘bearnaise’ roasted cabbage and pickled plums

In-between meals:
Skyr with liquorice, brown sugar and freeze-dried berries
Cheese Serving with 3 kinds of cheese, grilled onions, root vegetables and mushrooms dust

Desserts:
Bread and Beer soup with geranium ice cream, pickled apples and crispy flakes
Blackberry soufflé with rose cream

Practical information:
The cooking class includes a welcome drink, all commodities, wine and beer while cooking and selected wines to the menu. The drinks are not served ad libitum, but in reasonable quantities. Additional drinks can be purchased. Furthermore, cleaning and dishwashing are included. All participants will receive a set of recipes .
